You have
always been looking for a low carb but tasty alternative to spaghetti bolognese?
Well, this #cookwithmemonday might be the fulfilling of all your cravings and
the end of cheatings in the night. This post is for everyone who likes noodle
dishes but feels always bloated after all the wheat and carbs.
A healthy
alternative is zucchini pasta. Most of you might don't like zucchini but
honestly guys, you don't have the original taste of zucchini and I'm actually
also one of those who hates zucchini - trust me, it's good!
What you
need for 2 people

3 zucchini
200gr tofu
5 tomatoes
1 carrot
1 TS cashew
butter
salt,
pepper
a sprinkle
oil
1/4 onion
optional
onion and other spices

First you
start to heat the pan and add a little sprinkle oil. Following you add the tofu
which you need to smash into little crumbles. After a few minutes in the pan, add
the onion, salt and pepper.
Now prepare the sauce. Take the tomatoes, the
carrot and the cashew butter and place it into the blender. After mixing it
very well you can add it to the tofu and cook it.
Head over to your
noodles now. Boil water and add the zucchini you cut into the shape of
spaghetti with a spiralizer or a slicer and cook it for about 4-5 minutes.
Place everything on a plate and enjoy good food.
