FOOD | CHIA PUDDING WITH POMEGRANATE AND VANILLA

chia pudding cook with me monday food

Happy Monday my friends, a new recipe is waiting for you!
I know it's close to Christmas and the sweet tooths of us are craving for all the fatty sweet things. Still we are concerned about gaining too much weight during the holiday season. This is why I have prepared a healthy pudding recipe which is not only low fat but also none sugared and a guilty free treat, which is also high in protein...

I'm talking about chia pudding. The great thing about chia seeds is that they don't have an own taste, what basically means you guys can just do everything with them. I decided for pudding this time, since chia pudding is super simple and easy.

All you need is
two tablespoon chia seeds| 200 ml water |3 dates |vanilla |1/2 pomegranate | 1 tea spoon peanut butter (non sugared) | (coconut flakes)

Mix the chia seeds with the water and let it sit in the fridge for at least 5 hours. Take a pan and put the soaked chia seeds in it on middle heat. Now cut the dates into little pieces and add them, together with the peanut butter into the pan. Warm it only a little. The peanut butter will give it a little smooth and even thicken the pudding. After a couple minutes put everything in a bowl and place the pomegranate seeds on the pudding, add some vanilla and enjoy.
