Happy Monday
and a happy #cookwithmemonday. It's time to make you craving for new vegan
recipes. I prepared sweet potato chips and chicory filled with chickpeas in
tomato sauce, topped with a homemade vegan cheese. Got hungry? Well don't worry
I'm going to tell you the recipe..
There is
only a little you need for this mouth watering deliciousness. You need chicory,
2 table spoons nut butter, I highly recommend peanut butter ( non sugared) with
is low in carbs and has a high protein amount, some chickpeas, tomato sauce,
lemon, spices ,coconut oil and sweet potato.
For the
chips put your potatoes and sprinkle the coconut oil on it. Leave it in the
oven until they are golden and crispy baked. You can also sprinkle a little
salt on the potatoe.I put them in the oven my 200°C. Next step is preparing the
chicory which you basically just wash and fill with the chickpeas that you
mixed with tomato sauce and spices of your favor before. If you like to, you
can also feel free to add some onion to it.
Now only
the cheese is left which is made by 2-3 table spoon of nut butter with a little
of citron, salt and pepper. Place the cheese, which is liquid right now, on the
salad pieces. The cheese is getting "hard" in the oven.
